Shakshuka
Eggs cooked in a spiced sauce of tomatoes, onion, and red pepper, with whole-wheat toast for dipping.

Ingredients

To taste, not counted: 1 tsp ground cumin and 1 tsp paprika; a pinch of chili flakes; salt, pepper, and chopped parsley. They add a few calories at most.
Method
- Warm the oil in a 25 cm (10-inch) skillet over medium heat. Add the onion and pepper and cook for 8 to 10 minutes, until soft.
- Stir in the garlic, cumin, paprika, and chili flakes for 30 seconds. Add the tomatoes and a pinch of salt, and simmer for 8 to 10 minutes, crushing the tomatoes, until the sauce thickens.
- Make four hollows in the sauce and crack an egg into each. Cover and cook over low heat for 6 to 8 minutes, until the whites are completely set. Cook a few minutes longer if you like firm yolks.
- Scatter with parsley and serve from the pan, with a slice of toast each.

- The tablespoon of oil adds 119 calories. Softening the vegetables in 2 teaspoons instead saves about 39.
- Without the toast, a serving is 278 calories.
