Black bean and avocado rice bowls
A vegetarian burrito-style bowl with brown rice, black beans, avocado, cheddar, and spinach.

Ingredients
- Brown rice, cooked1 cup · 202 g248 cal
- Black beans, cooked and drained1 cup · 172 g227 cal
- Avocado, sliced½ avocado · 100 g160 cal
- Cheddar, shredded¼ cup · 28 g113 cal
- Baby spinach1 cup · 30 g7 cal

To taste, not counted: ground cumin and salt; salsa and a squeeze of lime, to taste. They add a few calories at most.
Method
- Warm the rice and beans together in a pan or the microwave with a pinch of cumin and salt.
- Divide the spinach between two bowls and spoon the rice and beans over it.
- Top with the avocado and cheddar, then add salsa and lime to taste.
How the calories add up
- Half an avocado adds 160 calories, mostly from fat, and the cheddar adds 113.
- Canned black beans are often a little different from beans boiled at home. For canned beans, use the can’s label in the recipe calculator.
- Salsa and lime add only a few calories per serving and aren’t counted. Sour cream or extra cheese would be.
