Chicken quinoa salad
A meal-prep salad of quinoa, sliced chicken breast, cherry tomatoes, cucumber, and feta with a lemon dressing.

Ingredients
- Quinoa, cooked1 cup · 185 g222 cal
- Roasted chicken breast, weighed cooked200 g330 cal
- Cherry tomatoes, halved1 cup · 149 g27 cal

- Feta, crumbled1 oz · 28.4 g75 cal

- Lemon juicejuice of ½ lemon · 24 g5 cal

To taste, not counted: salt, pepper, and dried oregano; chopped parsley or mint, if you like. They add a few calories at most.
Method
- Cook the quinoa and let it cool, or use 1 cup of cooked quinoa.
- Use leftover roasted chicken, or roast or pan-cook chicken breasts until the thickest part reaches 74 °C (165 °F). Rest for 5 minutes, slice, and weigh out 200 g.
- Whisk the oil, lemon juice, oregano, salt, and pepper in a large bowl. Add the quinoa, tomatoes, and cucumber and toss to coat.
- Divide between two bowls or containers and top with the chicken and feta.
Make ahead and store: Pack the salad into two containers. It is meant to be eaten cold. Refrigerate within 2 hours of cooking and eat within 3 to 4 days.
How the calories add up
- Each serving has about 38 g of protein, 31 g of it from the chicken.
- The oil and feta together add 194 of the 794 calories. Halving the oil saves about 59.
- Quinoa is weighed cooked. Dry quinoa is a separate USDA entry with far more calories per 100 g, because cooking adds water.
