Chickpea and feta salad
A no-cook vegetarian salad of chickpeas, feta, cucumber, red pepper, and spinach with olive oil and lemon.

Ingredients
- Chickpeas, cooked and drained1½ cups · 246 g403 cal
- Feta, cubed2 oz · 56.7 g150 cal
- Cucumber, diced1 cup · 104 g16 cal
- Red bell pepper, chopped½ medium · 60 g16 cal
- Baby spinach2 cups · 60 g14 cal
- Olive oil1 tbsp · 13.5 g119 cal
- Lemon juicejuice of ½ lemon · 24 g5 cal
- Whole recipe, 2 servings723 cal
To taste, not counted: salt, pepper, and dried oregano; a handful of arugula or parsley, if you like. They add a few calories at most.
Method
- Rinse and drain the chickpeas.
- Whisk the oil, lemon juice, oregano, salt, and pepper in a large bowl.
- Add the chickpeas, cucumber, and pepper, toss, and let stand for 10 minutes so the chickpeas take on the dressing.
- Add the spinach and toss gently. Divide between two bowls and top with the feta.
Make ahead and store: Pack the dressed chickpeas, cucumber, pepper, and feta into two containers, and add the spinach on the day so it stays crisp. Refrigerate and eat within 3 to 4 days.
How the calories add up
