Chicken and black bean burritos
Two big burritos filled with shredded chicken, rice, black beans, and cheddar, toasted in a dry pan.

Ingredients
- Flour tortillas, 10 inches2 tortillas · 144 g441 cal
- Roasted chicken breast, shredded, weighed cooked150 g248 cal
- White rice, cooked½ cup · 79 g103 cal
- Black beans, cooked and drained½ cup · 86 g114 cal
- Cheddar, shredded¼ cup · 28 g113 cal

To taste, not counted: ground cumin and a pinch of chili powder; salt and a squeeze of lime; salsa, to serve. They add a few calories at most.
Method
- Warm the chicken, rice, and beans together in a pan with the cumin, chili powder, and a pinch of salt for 3 to 4 minutes, until hot.
- Warm the tortillas for a few seconds in a dry pan or the microwave so they fold without cracking.
- Spoon half the filling down the middle of each tortilla, add a squeeze of lime, and top with half the cheddar.
- Fold in the sides and roll up tightly. Toast the burritos seam side down in the dry pan for 1 to 2 minutes per side, until golden. Cut in half and serve with salsa.
Make ahead and store: Let the burritos cool, then wrap each one in foil. Reheat in a dry pan or the oven. Refrigerate within 2 hours of cooking and eat within 3 to 4 days. Reheat until steaming hot all the way through, 74 °C (165 °F).
How the calories add up
- The two tortillas are 441 of the 1,019 calories. An 8-inch tortilla instead of a 10-inch one saves about 70 calories per burrito, but holds less filling.
- Each burrito has about 37 g of protein, 23 g of it from the chicken.
- Salsa adds only a few calories. Sour cream or guacamole would add more; enter them in the recipe calculator if you use them.
