Salmon with sweet potato and spinach

Ingredients

To taste, not counted: 1 garlic clove, sliced; salt, pepper, and lemon wedges. They add a few calories at most.

Method

  1. Bake the sweet potatoes whole at 200 °C (400 °F) for 40 to 50 minutes, until soft. Scoop out the flesh and weigh 300 g.
  2. For the last 12 to 15 minutes, bake the seasoned salmon on a lined tray until it flakes easily and reaches 63 °C (145 °F).
  3. Warm the oil in a pan, add the garlic for 30 seconds, then the spinach. Stir until it wilts, 1 to 2 minutes, and season.
  4. Serve the salmon with the sweet potato and spinach, with lemon on the side.
